Instead of drinking my protein, I bake it into snacks I can prep ahead of time. For mornings, that’s protein muffins.

The base of the recipe is real food: bananas, eggs, and Greek yogurt. Then oat flour, almond flour, whole rolled oats, baking powder, a little maple syrup, and frozen blueberries.
For the protein, I use multiple protein sources. A really good plant protein powder does the heavy lifting, and the almond flour, eggs, and Greek yogurt bring their own on top. Mix everything up and into the oven.
Ta da. Look at that gorgeous fluffy texture. No grittiness, no weird whey taste.
